Tapioca Harvest 2021

As our tapioca (மரவள்ளி / കപ്പ) harvest reached the halfway point, we paused the process due to uncertainties around a potential lockdown. Given the situation, we needed to process the harvested produce promptly and also preserve some roots in the soil as a backup.

From the 130 kg of tapioca we harvested, we processed 40 kg into flour. We’re currently experimenting with this flour as we transition from wheat flour. Initially, we’re using it in combination with wheat or rice flour for various snacks. To our surprise, some of the results have been better than anticipated.

Next month, we plan to share a portion of this flour with our community friends and gather their feedback. We’ll keep you posted on the results and any new recipes we discover!
